Chocolate Roulade Cheat Treat, recipe by Laurence Goodbody


Virtually carb free, makes 10 slices.


Per slice 51 kcal, 3.3g Protein, carbs 1.1g, Fat 2g.

Ingredients:
6 Egg Whites,
50g Artificial Sweetener,
50g Cocoa Powder,
250g Low Fat Soft Cream Cheese
100g Sugar Free Jam,
Few Drops of Vanilla Essence,
20g Dark Chocolate

Preheat oven to gas mark five, and whisk the egg whites until fluffy with stiff peaks forming.

As the peaks form, add the artificial sweetener.

Melt chocolate in the microwave, being careful not to burn, then add the cocoa powder to the melted chocolate.

If the cocoa powder and chocolate becomes thick, just a drop of water to loosen again.

Take on third of the egg whites and mix with the cocoa and chocolate mix, thereafter add this mix to the rest of the egg whites folding carefully as not to break down the egg whites.

When mixed place this mixture into a greased and flat oven tray lined with a baking sheet, cook for 20 minutes or until spongy to touch.

When cooked turn out onto a wire rack to cool. In another bowl mix the cream cheese with the vanilla essence, I like to add a few drops of lemon juice too.

When the sponge has cooled, gently remove the baking sheet and spread the cream cheese mixture evenly over the sponge, then on top of that spread another layer of the sugar free jam.

Carefully roll the sponge like a carpet and then dust with icing sugar, voilà a choccy cheat treat that won't spoil your diet!
